I can bake a mean batch of cookies. I can make yummy pasta. I am even pretty darn good at soups, if I do say so myself. But, I’m not always so great at side dishes. I’ll admit it. I have a weakness. I have never been very creative with sides. I usually steam broccoli or roast asparagus. Blah blah blah.
It gets pretty boring, to be honest.
Today, I finally broke my side dish slump. I found a recipe for broccoli cheddar rice cups that were ah-mah-zing. Seriously, I could not have been more tickled with the way they turned out, and so I decided to share the recipe with you.
Broccoli Cheddar Rice Cups
- 2 cups broccoli, chopped
- 1 cup brown rice
- 1 tbsp ranch dressing
- 1/2 cup cheddar cheese, shredded
- 1 egg, beaten
- 1 tsp salt
- 1/2 tsp paprika
Make the rice as directions suggest. Put it in a bowl and let cool a bit. Then mix in the rest of the ingredients (withholding 1/8 of a cup of cheese). Spoon the mixture into greased muffin tins and top with remaining cheese.
Place muffin tins in oven (preheated to 350 degrees) for 25 minutes.
The result is a really delicious (and adorable) little side dish. The broccoli gets tender, the cheese gets melty on the inside and a little crispy on top.
And really, who doesn’t love cheesy broccoli mixed with creamy rice? Delicious. Plus, they’re in a great serving size (this recipe made 5 “muffins”). I’d guess that kids would love them (I know I did, and I’m practically a kid).
